Harissa

Harissa, if you haven’t discovered it yet, is a vibrant Middle Eastern condiment that can be added to many dishes to give them a zesty hit of sweet and spice and all things nice.

It goes particularly well with lamb. I often use it as a condiment alongside roast lamb, coated lamb chops in it, slathered it on burgers and my new favourite, in a bun with merguez sausage, mayo and rocket.

It can also work with chicken or a meaty fish, like monkfish or hake, so long as you are not too heavy handed. I love adding a tablespoon or two to a tomato-based stew, such as my chicken, chorizo and chickpea stew or albondigas. You can also stir it through mayonnaise or yogurt to give them a bit of a kick.

Borough Market Blog, Sydney prawns and Dad's "benchmark" aioli

I’ve just started a series of guest posts for the Borough Market Blog. Check out the first post here. In the series I will be touching on some of the themes I have covered on my food anthropology page on food and identity. I’m interested in the special significance that people attach to the foods that they grew up with and the role this plays in defining who we are.

Over the coming months I will be speaking to seven traders from different ethnic backgrounds about the foods that are important to them and why. For the first post, I decided to ask myself the same questions I will be asking the traders. What are the foods that remind me of home? What foods make me feel nostalgic? What foods evoke special memories for me?

One thing I miss most about Sydney (my other home) is the seafood. In London, the best quality seafood is to be found at Billingsgate, which is very much geared towards the wholesale market. If you want to buy fish from there you have to get up at sparrows fart and trek out to Poplar (far for me). The Sydney Fish Market, on the other hand, is centrally located and aimed at both retail and wholesale customers.

Christmas fare and a recipe for beurre blanc

A belated Merry Christmas to you all! I am just awaking, bleary eyed and pot bellied, from a food coma.

My sister and I spent Christmas with our dear friend Chrissie and her family in Cambridge. Chrissie makes a fantastic roast and was responsible for convincing me a few years back that turkey doesn’t have to be a dry and dull affair when treated correctly. Still, I was very excited to discover a few weeks ago that we’d be having crown of pork instead; I’d choose fatty, juicy pork and crispy crackling over turkey any day.

Smoked salmon dip with dill and capers

Email from Mum this morning: "Just went to your blog to look for your smoked salmon dip recipe. It's not there. Can you email it to me? Or why not put it up? It would be an easy one for you to add."

She's right. This is a really quick and simple dip that always gets a thumbs up. It is great as a sandwich filling, on toast or with crackers or oatcakes. I often make it to take to work for lunch, for picnics or as a something to serve as nibbles before a meal. It also makes a great filling for quesadillas (see below).

You can use light cream cheese if you prefer but the consistency will be a bit thinner. This is ok if you are using it as a dip or spread, but not great for quesadillas.

Oh, and Mum - it's not my smoked salmon dip. It's Dad's. Credit where it is due. He won't mind though, I stole it years ago.

Diana Henry's Thai sweet chilli sauce

My sister will be surprised when she sees this. I have always berated her love of the shop-bought stuff. But when I read Diana Henry’s introduction I was intrigued:

“So much better than anything you can buy. It doesn’t have that cloying flavour of commercial bottles, but barks at you with biting, fresh taste.”

This led me to the list of ingredients, which looked very promising. And she is right, it is so much better than the shop bought version. Indeed, it might as well be another sauce.

The recipe is from Salt, Sugar, Smoke: How to Preserve Fruit, Vegetables, Meat and Fish, a lovely book full of recipes, tips and techniques for the home preserver. “I am a home cook” writes Henry, “I don’t have masses of special equipment and I don’t do things on a grand scale.” Her style is approachable and encouraging, showing that preserving isn’t just for “elderly ladies in floral pinnies or country-based downsizers with a vehicle big enough to transport several dead animals.”

I made this first to use up some chillies which my flatmate, Jen, had grown on our kitchen windowsill.  I liked it so much I decided to make it for Christmas presents in place of my usual jams or chutneys.
